To celebrate the third World Food Safety Day, this year's theme "Safe Food Today for a Healthy Tomorrow", researchers at UCP, Portugal, prepared a Danish recipe from the SafeConsume Recip-E- Book: "Kiksekage", which means 'biscuit cake' in Danish – a delicious traditional non-bake chocolate cake with vanilla biscuits. The use of raw eggs is the critical step in this recipe... but pasteurized eggs were used instead and all the food safety recommendations along the recipe were taken into consideration.
